What is your favourite cheap and easy vegetarian recipe?

I’m looking for new ideas for vego dinners as I’m fast wearing out my recipe books and getting sick of the same stuff over and over again. It needs to be cheap and fairly easy (I have a 14 month old boy so not a lot of time or energy to cook). Thanks guys!

My favorite thing to make is a burrito bowl. You’ll need
black beans
corn
rice
1 tbs oil of your choice (I use olive)
your favorite salsa
lettuce or fresh spinach
cheese, if you prefer
spices to taste: chili powder, cumin, crushed black pepper, garlic or onions, salt

Start the rice, since it takes the longest to make. While it’s cooking, drain and rinse your beans and corn and preheat a skillet with the oil. Put the beans and corn in the skillet, along with the spices (feel free to add or subtract anything you want.)

If you’re using spinach rather than lettuce, I like to fry it with the beans and corn, but it’s just as good fresh. You can also add diced zucchini and onion, if you have time for all the chopping.

When it’s done, scoop a serving of rice into a bowl, add a layer lettuce/spinach, add the beans and corn, and top it off with a heap of salsa and a sprinkle of cheese.

I also really like stir fry. My favorite is made with
broccoli florets
sliced carrots
baby corn
your favorite stir fry sauce (I love House of Tsang original)
garlic butter (or garlic and butter)
noddles, rice, or rice cakes for a meal on the go

Then add the baby corn and however much stir fry sauce you want. When the rice/noodles are finished, add them to the mixture, toss to coat, and serve. This is especially tasty topped with peanuts.

    One Bite Pizzas

    1/2 bag veggie burger crumbles

    1/2 tube vegan sausage (Tofurky)

    1 jar pizza sauce

    4 slices vegan cheese

    1 bag of toasted mini bagel chips.

    Mix the crumbles and sausage together, heat it for 20 secs. then add the pizza sauce.
    Melt the cheese on the bagel chips and add the sauce. :]

    Since your a vegetarian instead of vegan, it’s ok to get regular cheese.

    I have several vegan recipe sites bookmarked, but I don’t have time to copy and paste them. (Church is in ten minutes and I should pack up my laptop and get there.) However, try things with tofu. It’s soft, so your son should be able to more or less eat it. My two-year-old likes it cubed and then dips it in mustard and ketchup. Sites that are coming to mind: VegWeb, VegFamily, VegSource, MercyforAnimals, Compassion over Killing… (I’m not sure if these are .com, .org, etc., so do searchs.) Also, do searches for things like "vegan tofu recipes".

    Another cheap and easy one– Whole wheat pasta, veggie pasta sauce and canned tomatoes. WalMart sells the store brand whole wheat for $.89, and we stock up on the canned tomatoes and jarred sauce when Meijer puts them on sale 11 for $10. If we run out of that (rare), we buy the Hunt’s sauce for around $1.

    It’s easy to cook the same stuff over and over! Here’s a site for simple and delicious healthy vegetarian recipes. I have kids of my own so I know that recipes need to be quick to make but still taste great. Enjoy!
