Vegetarian recipe?

What is a really good recipe for a vegetarian dish that has tofu in it? (not bean curd style tofu (fried))

If you want some *killer* tofu recipes look up the cookbook "The new Farm Vegetarian Cookbook"! The tofu ‘cream’ pies are fantastic and meat eaters never know (until you tell them<evil grin>) that they just pigged out on tofu! I linked below to the soy section but all these guys books are first rate!

    If you fry the tofu in sesame oil and eat it with peanut butter sauce its really good, but my favorite thing with tofu in it is breakfast burritos. Just chop firm (not extra firm) or medium tofu into small cubes, toss it with tumeric and whatever other spices/herbs you want in it (i really like to add curry powder). Then sautee it with vegan sausage, potatoes, almond cheese, tomatoes, and whatever else you can think of. put it in flat bread with some advocado and its like the best, healthiest breakfast ever.

    I’ve used the recipe below as a base to a kind of Tofu Parmesan. Once the tofu is baked as below, layer in a baking dish:

    Tomato sauce, layer of tofu, layer of soy or milk cheese, another layer of sauce, tofu, more sauce, then cheese. Bake 10 minutes covered at 400, then another 5-10 minutes until the cheese is bubbly and brown.

    Baked Italian-Style Tofu

    Drain well 1/2 block of extra-firm light tofu

    Slice into 1/2-inch slices (you’ll get roughly 6 slices). Put them in a bowl with
    garlic
    oregano
    basil
    fennel seeds
    red wine or red wine vinegar dilluted with water.

    Toss to coat the slices.

    Bake in a 400 oven until they are brown and firm.

    There is a recipe but it is not a tofu recipe,
    you need…
    peas
    potatoes
    bread
    salt and seasoning

    1. boil potatoe(until smash-able) and peas (seperately)
    2. smash potatoes to make mashed potatoes
    3. add peas and mix
    4. add spices and salt
    5.take 2 slices of bread , and take a spoon full of mixture and place in between breads then close breads by buttering and squeezing ends.
    6. deep fry the dumpling-like thing until brown
    7. squeeze of excess oil

    CRISP-FRIED TOFU AND GREENS

    Ingredients:

    2 cakes of tofu, frozen overnight and thawed
    1/2 cup water or vegetable stock
    1 tsp cornstarch
    1/2 cup cornmeal or cornstarch

    Marinade:
    1/3 cup soy sauce
    1/4 cup rice vinegar
    1 tblsp finely grated gingerroot
    2 cloves garlic, minced or pressed
    dash cayenne

    Sauce:

    3 tblsp soy sauce
    1/4 cup dry sherry
    2 tsp rice vinegar
    2 tsp honey or brown sugar

    Vegetables:
    3 tblsp oil
    3 cloves garlic, minced or pressed
    1 cup thinly sliced onion
    6 cup mix of coarsely chopped pak choi, chard, kale,
    nappa cabbage or 9 cup chopped spinach

    Instructions:
    Gently squeeze as much liquid out of thawed tofu as possible. Cut tofu
    crosswise into 1/2-inch thick slices, then diagonally, to make 4
    triangles.* Combine marinade ingredients and mix well. Arrange tofu
    triangles in one layer in a dish and cover with marinade. Allow to sit
    for at least 10 minutes to absorb the flavors. Prepare sauce mix by
    combining all ingredients in a small bowl. In a separate bowl mix the
    water or stock and the 1 tsp. cornstarch. Dredge marinated tofu pieces
    in cornmeal or cornstarch and fry over medium heat in 1/8 to 1/4 inch of
    oil, for 3-4 minutes on each side. Drain and keep warm in 200F oven.

    Add leftover marinade to sauce mix. Heat 3 tblsp oil in a wok. Stir-fry
    garlic and onion until onion is tender. Add greens and continue
    stir-frying until just wilted but not mushy. Add sauce mix and
    cornstarch mix and stir-fry just until sauce is thickened. Add reserved
    fried tofu. Serve with rice.

    * I cut the tofu into many more smaller triangles.

    For a quick dish I tend to buy the ready marinated tofu and chuck iit in with a stir fry. My kids love it!
