this is very interesting and i’m gonna try it.
At the moment the way i make mine is add the spinach at the first stage of making roti dough, so actually mixing the atta and spinach together, i also add ginger and garlic too.

I just have one question….when I make any parathas…they don’t puff up as thry do for you…why is that so?Can I ask which brand atta do you use? I bought Swad atta last time from Indian stores..but could you please give me a solution for my parathas not puffing up like yours do?Thanks a lot.

I haven’t tried it yet, but I think I’ll do just that
Or you could blanch the spinach (have some boiling water, immerse the spinach in the water for up to five seconds, then remove. And then you can use your spinach water to prepare the paratha dough.
