What are some exciting new vegan/vegetarian dishes I can make?

I LOVE using tofurky, seitan, and tofu and all vegetables!
I make pizzas, pastas, lasagnas, scrambles, stuffed tofu-basically your novelty meals.
What are other people’s favorite and EASY quick dishes?

This is a great way to use up left-over pasta.

roast some garlic, olive oil, and small (cherry or grape) tomatoes
add some vegetable broth (just a little for flavor)
add in some pasta (already cooked) and half a container of silken tofu

    heat through!

takes about 10 minutes after the pan heats up

We’re italian so there’s always leftover pasta here :)
