proportion of the liquid to the leaves etc is ok and the ish does not turn dry.

I live in hawaii. so instead of using dried taro leaves. can i use fresh ones instead?
and why does the sauce turns green. I seen some from this place called golden Coin and it looks milkier white than a greeny consistency like yours.
