tyr the moose wood series of cook books from the moose wood inn they are all vegetarian and vegen i believe (my girlfriend has a few of them ) they can be had at most major book stores like barnes & noblle

How to Cook Everything Vegetarian by Mark Bittman is the most fantastic vegetarian cookbook I’ve ever read. Also, please check out the Chez Panisse vegetable cookbook–although not strictly vegetarian, the meatless recipes are stunning.

Vegcooking.com. You should be able to find anything there if you are just starting out. You probably don’t need any cookbooks, unless you are just looking for a variation of a recipe. Vegan with a Vengeance is a really good cookbook.

I don’t go into the kitchen without Veganomicon. It’s vegan, but it has some fabulous recipes that are delicious and pretty easy to make. It covers everything from pastries to entrees.
