Do you have any vegetarian chili recipes?


Here is a really good recipe -
Vegetarian Chili:
Ingredients:
1 large can crushed tomatoes
1 can tomato paste
1 can corn kernels
2 cans red kidney beans
1 large can black beans
1 large can baked beans/bean in tomato sauce
1 can mushrooms
1 med onion
1 green pepper
2 cloves garlic
1 jalapeno pepper
1 chili pepper
1 bunch cilantro chopped finely
1 T cumin
1 T chili powder
1 t cayenne pepper
1 t oregano
1 t salt

Directions:
Heat oil in pan on med heat, chop onion, chili pepper, jalapeno pepper, garlic, add to oil, cook until onion is soft (not brown), chop green pepper, add green pepper + one can of mushrooms to pot drain kidney beans *rinse off beans before adding to get off bean slime* + add to pot, also add black beans, corn, baked beans,crushed tomatoes and tomato paste, mix well, add cumin,oregano,chili powder,cayenne pepper,cilantro and season to taste with s + p, cover and cook on low heat for at least an hour, stirring occasionally, serve with sourdough, corn bread or corn chips, enough for lunches and plenty to freeze.

    yea!!!! try this:

    2 tablespoons vegetable oil
    1 large onion, chopped
    4 large cloves garlic, minced
    3 tablespoons chili powder
    1 medium-size sweet green pepper, cored, seeded and diced
    1 medium-size sweet red pepper, cored, seeded and diced
    1 medium-size zucchini, diced
    1 medium-size yellow squash, diced
    1/2 teaspoon dried oregano
    1/4 teaspoon ground red pepper (cayenne)
    1 can (14.5 ounces) stewed tomatoes
    1 can (11 ounces) corn kernels, drained
    1 can (15.5 ounces) black beans, drained and rinsed
    1/4 teaspoon salt

    u can add or take away some of the veggies if u dont like them or whatever. throw it all in a pot 4 10 min on high and there u have it.
