Coconut Cream Filled Strawberries are the good twin to the devilish chocolate filled strawberries that I made yesterday. They are light, fluffy, healthy-ish, and remain divine.
Spoon the cream from the can of coconut milk into a large mixing bowl, leaving the liquid behind.
Beat coconut cream, powdered sugar, cinnamon, and vanilla extract until whipped and fluffy with an electric hand mixer.
Fit a piping bag with the decorative tip of your chose (or just cut a hole in the corner of a zip lock bag). Fill about half way with your whipped cream.
Place the tip of the piping bag into the hulled strawberry and slowly fill. Be sure to finish with a swirl on top.
Most of all, enjoy your wonderful creation.

My recipe is good for vegetarians, though, because it gets its flavoring from the Holy Trinity of celery, onion, and bell pepper plus smoked paprika rather than ham hocks. Fry up some sliced andouille or other sausage to serve on the side for meat-eaters.
INGREDIENTS
* 1/2 pound kidney beans, soaked overnight in 6 cups water
* 1 onion, diced
* 3 stalks celery, diced
* 2 bay leaves
* 1 bell pepper, diced
* 4 cloves garlic, minced
* 1 teaspoon dried thyme
* 1 tablespoon chopped parsley
* 1-2 teaspoons salt
* 2 teaspoons smoked paprika
* Hot buttered rice to serve
INSTRUCTIONS
* Drain the beans from their soaking water and rinse.
* Put into a large pot with 4 cups water, onion, celery, and bay leaves. Cover pot.
* Bring to boil, then reduce heat and simmer 1 to 1.5 hours, or until beans are soft.
* Add bell pepper, garlic, thyme, salt and pepper. Simmer uncovered an additional 30 minutes.
* Use a large spoon to mash some of the beans against the side of the pot to make a creamy gravy.
* Serve over buttered rice.

Hi I am following Dr Doug Graham’s 80 10 10 diet. Its day 3 of my Detox.
I’m not feeling well at all – currently clearing all the built up toxins in my body from my previous unhealthy lifestyle. I am realising only now just how unhealthily the ‘old me’ was.
Becoming Raw Vegan and just eating fruits will help me – I just know it – although I’m finding this transition period really testing….back to the toilet
Day 1. I was super excited to be on this diet. 100% cold turkey low fat raw vegan!!
Day 2. I felt great up until 2 in the afternoon. That’s when I start to feel a little out of it, nauseous and I was feeling a little bit anxious. I buckled and ate some crackers and became so disappointed in myself. Crackers didn’t help – nausea still present.
Day 3. Couldn’t really get out of bed. Dr Doug Graham says to breathe through the bouts of nausea. Staying hydrated.
I did some reading and I think I’m seriously detoxing. I was coming from a pretty bad diet of meat, dairy and prescription medicines. Should I have eased in to this??? At least I haven’t gone back to the crackers. When will this detox end? Not sure how to keep going.
