Karen Morgan and Matthew Cole are Vegan Society trustees and were interviewed during the Bristol Vegan Fayre 2009.
To be trustee requires skill and ability to be effective, trustees are ultimately responsible for the charity, fot the research an many other important tasks of the Vegan Society.
“…we work on the improuving the provison of vegan food for instance in care homes or hospitals, we try to encourage to provide vegan food in the schools…we made a website called wegatopia one of the things we are trying to do is create links trough the countries, create links between academia and activism. We are both sociologists in academia, utopian studies in Bristol University. We’ve written a few papers discussing the idea about why veganism is a utopia movement. We are talking about transforming the society in a radical way. Veganism is a practical solution for a lot of issues in the world. The biggest obstacle is people saying we are not realistic, the implication of that would seem to be just do nothing, give up. That’s not an option for us. The debates of climate change, of food security, ongoing malnutrition despite that enough food is produced to feed anybody in the world but it’s not getting to the right people…
There are many many opportunity where veganism is a real sensible, practical solution, we need a political will to make it happen, we need also academic like us doing research, making contribution to the vegan movement, giving some good evidence for what we are arguing”.

Coconut Cream Filled Strawberries are the good twin to the devilish chocolate filled strawberries that I made yesterday. They are light, fluffy, healthy-ish, and remain divine.
Spoon the cream from the can of coconut milk into a large mixing bowl, leaving the liquid behind.
Beat coconut cream, powdered sugar, cinnamon, and vanilla extract until whipped and fluffy with an electric hand mixer.
Fit a piping bag with the decorative tip of your chose (or just cut a hole in the corner of a zip lock bag). Fill about half way with your whipped cream.
Place the tip of the piping bag into the hulled strawberry and slowly fill. Be sure to finish with a swirl on top.
Most of all, enjoy your wonderful creation.

My recipe is good for vegetarians, though, because it gets its flavoring from the Holy Trinity of celery, onion, and bell pepper plus smoked paprika rather than ham hocks. Fry up some sliced andouille or other sausage to serve on the side for meat-eaters.
INGREDIENTS
* 1/2 pound kidney beans, soaked overnight in 6 cups water
* 1 onion, diced
* 3 stalks celery, diced
* 2 bay leaves
* 1 bell pepper, diced
* 4 cloves garlic, minced
* 1 teaspoon dried thyme
* 1 tablespoon chopped parsley
* 1-2 teaspoons salt
* 2 teaspoons smoked paprika
* Hot buttered rice to serve
INSTRUCTIONS
* Drain the beans from their soaking water and rinse.
* Put into a large pot with 4 cups water, onion, celery, and bay leaves. Cover pot.
* Bring to boil, then reduce heat and simmer 1 to 1.5 hours, or until beans are soft.
* Add bell pepper, garlic, thyme, salt and pepper. Simmer uncovered an additional 30 minutes.
* Use a large spoon to mash some of the beans against the side of the pot to make a creamy gravy.
* Serve over buttered rice.
