A basic recipe for rice pilaf that you can mix up however you like!

I basically lived off of rice pilaf when I was in college. It’s cheap and filling and pretty nutritious and you can add almost anything you have lying around. “Rice with some in it”. That’s what I called it to my boyfriends. That’s probably why I never got stuck cooking for any of them. Hey-Oh!
INGREDIENTS
* 1/4 cup chopped onion
* 1/4 cup chopped celery
* 1/4-1/2 cup chopped other vegetables (optional)
* 1 clove garlic, chopped
* 1 teaspoon each butter and oil, or just oil
* 1 cup rice or bulgur
* 1 bay leaf
* 1/2 teaspoon salt and pepper
* Optional herbs: a teaspoon of dried dill, oregano, fenugreek, thyme, mint, tarragon, or basil (or just go crazy. Experiment.)1 7/8 cup water (the more vegetables you add, the less water you need since the liquid in the vegetables counts, too. For every 1/4 cup of vegetables you add, take out a tablespoon or so of water)
* Optional: about 2 tablespoons nuts (pistachios, almonds, walnuts, you know what kind of nuts you like)
Melt the butter and oil and saute your vegetables and garlic for a couple of minutes to soften them. Add the rice and stir it around quickly to coat every grain. Let it toast up, stirring occasionally, for a couple more minutes. Add your herbs and seasonings. Stir it up. Add the water. Stir it again. Bring it to a boil. Turn down to low and put a lid on that sucker. Let it cook over low for 15 — 20 minutes until the liquid is absorbed. Turn off the heat and set it aside for 5 minutes. This is important. If you stir it right away you will break up the grains and the rice will get mushed and not be so fluffy. After it has rested, add your nuts and toss gently to incorporate. Serve.

How to Substitute Meat for raw Food Recipes
The benefits of raw foods are well known, as they are not only the greatest sources of vitamins and minerals, they also contain living enzymes that the body needs to function properly. If you are trying to add more raw food into your diet, there are a variety of ways that you can alter your recipes and substitute meat.
Instructions:
Step 1:
Learn to sprout various beans, legumes, grains and seeds so that you can substitute meat in your favorite recipes with a high protein and nutrient packed food. Sprouts are easy to grow, require very little equipment and are a very inexpensive way to boost your daily nutrition.
Step 2:
Use untoasted wheat germ in just about any recipe to add many of the same nutrients as found in meat, such as protein, B vitamins and iron. Wheat germ is easy to digest, has a lightly sweet and nutty flavor and provides a nice texture in raw soups, on salads or even blended into raw dips.
Step 3:
Go with mushrooms instead of meat. Marinate sliced mushrooms as you would meat, leaving them to soak overnight in oils, sauces and spices and then mix them into your raw food recipes in place of meat. You can even chop mushrooms or place them in a food processor in place of hamburger or other ground meats.
Step 4:
Experiment with various nuts, raw sauces, oils and spices in your food processor to create a nutty meat substitute. For example, mixing wheat germ, raw Brazil nuts, chili powder, raw soy sauce and your choice of other spices makes a great raw meat loaf. Processing macadamia nuts with curry powder and olive oil gets you something of a chicken substitute.

How to Make Meat Loaf: Raw Food Recipe
You can make raw food meat loaf from soaked nuts and seeds. The combination of nuts, sunflower seeds, vegetables, spices and olive oil delivers the flavor of traditional meatloaf without ever heating up your kitchen. Raw food devotees and vegetarians can enjoy this hearty meal as a special treat or occasion.
Instructions:
Step 1:
Cover all seeds and nuts in a bowl of water. Soak them for 4 hours. Drain the nuts and seeds. Add to the food processor. Add garlic. Process well until the mixture becomes doughy. Add olive oil to thin, if necessary.
Step 2:
Stir in the sea salt, parsley, onion, celery, mushrooms, ginger, rosemary, red bell pepper and basil. Mix well.
Step 3:
Shape the mixture into a loaf on a solid dehydrator sheet. Dry the meatloaf for one hour at 90 degrees Fahrenheit.
Step 4:
Remove the meatloaf from the dehydrator. Top with raw ketchup.
Step 5:
Dehydrate the meatloaf for an additional 2 1/2 hours at 90 degrees.
Step 6:
Garnish with fresh parsley. Serve immediately with raw ketchup.

How to Get Protein in a Raw Food Diet – Low Calorie Recipes
Meats and dairy products are the most common food sources of protein. However, they don’t do you much good if you are switching to a raw food diet. Fortunately, the number of raw food sources of protein may surprise you, and getting enough in your new diet is a snap.
Instructions:
The first way:
Sprout beans and seeds, possibly the best way to get a rich source of protein on a raw food diet. Lentil, garbanzo, black beans, mung beans, sunflower seeds are easy to sprout and add to just about any raw food recipes.
The second way:
Eat plenty of green, leafy vegetables such as chard, broccoli, romaine lettuce and spinach, as well as oil-rich fruits such as coconut and avocado.
The third way:
Add nuts to your meals as a fantastic source of protein and healthy fats. Use nuts to make cheese alternatives, desserts, sprinkle on salads or eat as is for a healthy snack.
The fourth way:
Prepare your foods with nutritional yeast, a delicious powder with a cheesy flavor that is full of protein, B vitamins and amino acids. Add nutritional yeast to salad dressings, stir into raw soups or use as a seasoning for your favorite recipes.
