My tip for tweaking a Mexican menu while dining out in Mexico are very easy. Mexico uses a lot of beans and a lot of vegetables and lots of corn tortillas. If you are gluten sensitive that is great for you because you can opt for corn instead of flour tortillas. You can pretty much vegetarianize anything. Tacos just replace the meat with beans, if you are vegan just get rid of the cheese.

A lot of times they do not serve it with cheese, that is an American thing. Tostada salads, opt for beans instead of meat, get the cheese off and replace more vegetables. You can do guacamole, you can do salsas, you can do all sorts of things. The only thing is to ask and see if beans are especially refried if they are cooked with lard or if they have been made with a chicken or a beef broth. But other than that you are golden in Mexico.

We farmers care about our animals or we wouldn’t be farming. We don’t own or work on mega farms because we don’t believe in them. In fact, you won’t find a mega farm in Ohio – they’re all family owned. We raise our pigs in a way that makes it easier to provide them with protection and a comfortable environment in which to live. We believe that we’re the ones who know what’s best for our animals since we work with them literally every day of the year. Wouldn’t you rather have someone that committed making decision about how your food is raised than someone thousands of miles away who only wants to create a vegan society?

This isn’t my family’s farm but like them we care about our animals and love every minute of what we do.

How to Make Shirataki Salad (Recipe)

This is a great recipe for those looking for a low calorie or vegetarian recipe. Shirataki noodles is a special noodles made from yam starch and it usually close to zero calories and zero carbs. The taste and texture is similar to gelatin/jello.

Help protect my family’s farm and others like it by voting YES on Ohio Issue 2!

We farmers love what we do. Would we honestly work weekends, holidays and 365 days a year, barely making a profit, if we didn’t care about what was best for the animals we’re raising? In my opinion, only people this committed to animals and agriculture should be allowed to make the decisions that decide how farms operate, not some lobbyist whose main goal is to transform us into a completely vegan society.

This isn’t my familys farm but as a fellow 5th generation family farmer I’m proud of what this family is doing.

Betty’s Creamy Corn Chowder Recipe

In this video, Betty demonstrates how to make Creamy Corn Chowder. This is a very light chowder that combines potatoes and corn, along with onions and seasonings, and is topped off with crisp bacon crumbles. This is lower calorie version of a traditional hearty chowder.

Ingredients:

6 slices bacon
1 medium to large onion, chopped
2 tablespoons extra virgin olive oil
2 medium to large russet potatoes, peeled and cubed
1/2 cup water
14.5-oz. can cream-style corn
1 1/2 cups milk (You may use half and half for a creamier chowder.)
1/2 teaspoon salt
dash of ground black pepper

In a large skillet, cook the bacon until crisp. Crumble bacon, and set aside. Pour off all grease from the skillet, reserving the bits of bacon that have clung to the skillet. Add 2 tablespoons olive oil to the skillet, and saute a chopped onion until soft and browned from the bacon leavings. Place 2 cups of peeled, cubed potatoes, along with the sauteed onion, and 1/2 cup water in a Dutch oven. Bring to a boil over medium heat. Cover with a lid that fits, reduce heat, and simmer 18 to 20 minutes or until potatoes are tender. Stir in a 14.5-oz. can of cream-style corn, 1 1/2 cups milk, 1/2 teaspoon salt, and a dash of black pepper. Cook until thoroughly heated, stirring often. Do not boil. Ladle into bowls, and sprinkle crisp, crumbled bacon on top of each serving. You may serve this chowder with toasted bread, saltines, or cornbread sticks. I chose cheese crackers to accompany mine. This is lower in calories than most cream soups, although you can make changes as you like. If you are vegetarian, just leave out the bacon, and it will be a great meal for you! This ended up being one of the best recipes
I have ever made on YouTube!!!
The dipping sauce turned out so incredibly good,
that it literally gave me goosebumps.
This sauce has perfect textures,
a perfect taste & a perfect balance.

* I n g r e d i e n t s *
For the FILLING:
— 1 head of Cauliflower, broken into florets
— 4 cobs of Corn, raw

For the DIPPING SAUCE (can also function as a salad dressing recipe!):
— 1-2 Beefsteak Tomatoes
— 1 Avocado
— 1 Peach
— 1 Lime

For the VEGGIE WRAPS:
— 1 bunch of Collard Green leaves (or another dark, leafy green such as Kale)
— Carrots*, Celery Stalks, etc. (if you desire extra veggies for dipping)
*unpeeled if organic; peeled if inorganic

* P r e p a r a t i o n *
— 1) To make the filling, use your food processor’s S-blade attachment to blend the cauliflower florets down to about the consistency of mashed potatoes, then transfer to a bowl.

— 2) Slice the raw corn off of the cobs, and roughly fold into the cauliflower using a mixing spoon.

— 3) To make the dipping sauce, roughly chop the tomatoes, avocado & peach, and toss them into your Vita-Mix blender, or other high-powered blender of your choice. http://bit.ly/GZsuq or http://bit.ly/3OTXD9

— 4) Use a manual citrus juicer or a citrus hand juicer to squeeze the juice of the lime into the Vitamix as well.

— 5) Blend until the consistency of a thick vegetable dip is reached, and transfer to a bowl.

— 6) Scoop the cauliflower ‘n’ corn filling into the center of the collard green leaves, roll them up into wraps, and serve alongside the YUMMY dipping sauce!

— 7) If you want to include whole vegetables to also enjoy with the dip, then please do so! You could try carrots, celery, etc.

* I n s p i r a t i o n *
— Most of the recipes that I prepare every day, I have usually not prepared before! I pretty much just look at what food I have in the fridge and coolers, taking care to notice what items might be soon going bad if they aren’t eaten soon, and then go from there.

— Likewise, when I go grocery shopping I don’t usually have a ‘list’ of items to get unless there is some special occasion or special ingredient that I just have to have. I instead prefer to pick out what fruits and vegetables seem to be the freshest, most vibrant, as well as most local and organic or pesticide-free as possible. I encourage you to try out these methods of shopping and preparing food as well!

— As you’ve probably noticed, all of my recipes can be made in around 10-30 minutes. For my day-to-day eating, I like to keep things simple! I don’t understand a lot of the raw food books, as they seem to make things so complicated! I just want some grub, and I know you and possibly your families do too. ;)

— Also, I like to eat ‘clean’ recipes with little or no salt, with not too many crazy ingredients, and with simply not a great number of ingredients at all. The more simple your eating, the more simple and easy your digestion will be, leaving YOU with extra energy. Not a bad deal. ;)

— On your “raw food diet” or “fruit and vegetable” path of eating, support is the key…along with simplicity and non-judgment.

— I am glad that you are getting healthier! I am glad that I can be of service to you! I’ve never had more fun, nor have I ever felt more passionate about anything in my life than what I’m doing right now by making these videos for you.

— I’ve also never had so much love thrown back at me like this either. I feel this amazing feeling of love, and each and every one of you out there is a blessing in my life.
