This Tofu spread is a nice alternative to egg salad if you are a vegetarian or a vegan. You can adapt it in many ways and is a nice way to introduce your children to tofu. It’s delicious, healthy and nutritious.
INGREDIENTS
- 16oz block of firm tofu
- 1/3 cup of finely chopped green onions or chives
- 1/3 cup of finely chopped celery
- 1/3 cup of finely chopped bell pepper (red)
- 1/3 cup of finely chopped parsley
- 1/3 cup (or 2 Tbs) of Dijon mustard
- 1/3 cup (or 2 Tbs) of yellow mustard
- 1/3 cup (or 2 Tbs) of plain yogurt or sour cream or mayonnaise or vegenaise
- 1 Tbs of Curcumin
- Salt and pepper or cayenne pepper to taste.
Mash the tofu and mix everything together. Enjoy it rapped up in a lettuce leaf, as a sandwich, on crackers etc.
