What is your favorite vegetarian taco recipe?

Wednesday, January 11th, 2012

I love ground beef taco’s with taco seasoning in the beef. Unfortunately I’ve already done so much damage to my body I feel I should replace a couple meat filled dishes with vegetarian ones. What’s your favorite vegetarian taco recipe that gives you the comfort of meat and is also filling as well?

grilled portobello, crispy fried onion, a mix of lightly sauteed yellow pepper, green and yellow zucchini strips, shredded soy cheese, roja salsa ( made with roasted red and orange peppers, chil and tomatoes) black beans and vegan sour cream. Add a spoonful of guac for topping.
Believe me, if you prep all those foods so you have backups, and make these tacos…um um.

What is a really good vegetarian recipe that gives you tons of nutrients?

Saturday, January 7th, 2012

I’m having a dinner party and most of my friends are vegetarian and I am going to have the whole dinner vegetarian. I want a meal that has tons of nutrients as well. Any suggestions?

Sure, Kat. I’m not a vegetarian, but I, too, have many friends and family members who are, and I feed them one of two dishes. Here are the recipes:

Vegetarian Pasta with Infinite Variations

Start with a good-quality pasta–whole grain, tri-color, green, ‘super.’ Cook according to package directions so it’ll be done no more than five minutes before you plan to serve the meal.

In a large skillet, sauté 1 tsp. minced garlic in olive oil 2 to 3 minutes, until it’s fragrant.

Optional additions: all or some of the following
•Coarsely chopped sweet onion, sautéed until fully soft
•Fresh mushrooms, either sliced white, sliced baby portabellas, or diced portabellas, 8 – 12 oz. before cooking
•Canned mushrooms, meaning this meal can be close to shelf-stable
•Artichokes in brine, drained and quartered, one can (13-16 oz.)
•Sun-dried tomatoes, 1/8 -1/4 cup after chopping into pieces 1/4 inch by 1/2 inch or so, to spread their intense flavor throughout the dish. Note: Drain fully or the whole dish will taste of the oil they’re packed in, overwhelming other flavors–which can be deliberate and tasty.
•Sliced black olives, drained
•Fresh baby spinach, 6 to 10 ounces, which will wilt and shrink substantially
•A fat: more olive oil if needed, or some butter, or low-fat sour cream
•An acid: lemon juice, 1-2 Tablespoons (or way more, to taste), balsamic vinegar, rice vinegar, raspberry vinegar

When pasta is cooked, drain and stir into whatever you’ve put in the skillet.

Add all or some of the following, so they have time to warm but not to cook and fall apart, toughen, burn, or melt
•Fresh cherry or grape tomatoes, halved
•Leftover cooked vegetables: broccoli, peas, lima beans
•Fresh mozzarella cheese, 8 oz. cut into 1/2-inch cubes (the mozzarella used on pizza does not work very well)
•Feta cheese, crumbled, with or without herbs, 4 – 8 oz.
•Bleu cheese, 4 – 8 oz
•Pine nuts

You can serve this to vegetarians multiple times, making it quite different in each rendition.

The other favorite:

PIZZA WITH SPINACH AND SUN-DRIED TOMATOES

Prepared pizza dough
2 tablespoons olive oil
1 large clove garlic, minced
7-10 oz. spinach, de-stemmed and coarsely chopped, or 6-10 oz. baby spinach
Salt and pepper to taste
1/4 cup oil-packed sun-dried tomatoes, drained and cut into thin strips
4 ounces crumbled feta cheese
Mushroom slices (portabello, white), about 8-12 ounces before cooking

Heat oil in a large skillet. Add garlic and cook one minute. (Do not brown. It’s okay to use minced oil- or water-packed garlic from a jar.) Add mushroom slices (up to two portabello caps) and sauté until softened. Add spinach and season with salt and pepper. Cover and cook until spinach wilts, about 5 minutes. Top the prepared crust with spinach and some of the pan juices. Sprinkle with sun-dried tomatoes and cheese. Bake at 425F for about 14 minutes or until crust is fully browned at the edges. Watch closely near the end, since feta burns easily.

Enjoy your meal and your guests!
