Learn how to cook Besan ki Roti recipe by Manjula. This bread is gluten free.
Ingredients
2 cups besan gram flour (available in Indian grocery stores)
2 tablespoons oil
2 tablespoons yogurt (dahi)
1/2 teaspoon salt
½ teaspoon chili flakes
1-1/2 tablespoon dry fenugreek leaves (kasoori mathi)
Pinch of asafetida (hing)
Approx. ¼ cup of water use as needed
¼ cup rice flour for rolling the roti
Approx. 2 tablespoons butter or ghee (clarified butter)

I have loads of veggie cook books and have been veggie virtually all my life. As I’m the only one in my family with the rest being meat eaters, I can never be bothered to make something just for me. I always resort to cheesy things because they are quick and I work long hours.
I am looking for tried and trusted recipes both for quick meals and for when I have more time on my hands. Please don’t suggest recipe books, its your recommended dishes I’m interested in.
these are super simple recipes i love to make for myself (the only vegetarian in the family) but are super easy (and i’m only 13)
this is my go to/i don’t want pasta tonight
black bean and corn tacos
1 12 oz can black beans(drained)
1 12 oz can corn(drained)
2 1/2 tsp cumin
1/2 cup salsa
put black beans in pot with 1 tsp cumin and 1/2 cup salsa stir ocassionally. put corn in with 1 1/2 tsp cumin and cook in pan with oil until golden and slightly crisp.
or i make this on the weekend and put in fridge to heat up
veggie pot pie (sorry about the measurements but the recipe isn’t very finicky)
pie crust (i use my own but i forgot the recipe at the moment sorry)
1-2 stalks celery
1-2 carrots
about 1 cup peas
5ish boiling potatoes (cooked until slightly tender and in 1 inch cubes)
3 cups veggie broth
2 tbs soy sauce
2 tbs cornstarch
1/4 cup water
1/4-1/2 cup flour
1 onion
2 cloves garlic
herbes de provence (optional- to taste about 1 tsp)
thyme (optional- about 1 tsp)
salt and pepper
saute onion and garlic in oil
add vegetables and deglaze with broth
mix cornstarch and soy sauce, and add to veggies
cook for 5 minutes (stirring)
add 1/4 to 1/2 cup flour to thicken sauce
add seasonings
line baking dish with crust, add veggies, and top with crust (9 in baking dish) put slits in top (don’t worry if all the veggies don’t fit actually i usually eat the extra while i’m awaiting my pot pie)
cook for 15-20 minutes

I’m making a pasta with a creamy tomato sauce and the recipe calls for shrimp but I’m a vegetarian. I’m making it for other people (but I’d like to eat it too), is there something I can replace the shrimp with that will add to the flavor so it’s not missing something?
Use mushrooms. Choose a flavorful type like chestnut mushrooms, then saute them before adding them to the recipe. You can saute some chopped onion with them too. The mushroom and onion will give lots of flavor. You might also like to serve a simple green salad on the side.
Next time you could try something like a vegetarian lasagna:

If you want to add a contrasting color to your pasta recipe, you might like to add some green beans or peas along with the mushrooms (or instead) and perhaps serve parmesan on the side so people can add their own.
