I’m vegetarian, and I really need some good meals that would be easy for my mom to make for me? I want them to stay under 600 calories maximum? mostly because most of my moms meals are like 800 calories, and its really hard for me to deal with that… Anyway, if you know some then it’d be great! Thanks!!! 
There’s always a good old fashioned salad minus the fatty dressings. The thing I’ve noticed about being a vegan is that I can create my own concoctions and be creative in my meal and dish preparation. Many of the meals I eat today are the same ones I ate in the past except I throw in a protein heavy substitute for the meat. Like a stir-fry, instead of the chicken I put in some salt free cashews or another nut/legume. Other times I just don’t add meat to the dish. For my soups, and I love tomato soup, I use soy milk instead of cream. And I use vegtable stock instead of chicken or beef broth for my broth based soups.
