The Yoga Wholistics iNQ team* went to a neighborhood vegetarian restaurant in Makati City, Philippines, to interview Chiqui Mabanta of Corner Tree Cafe. We enjoyed a delicious vegan lunch (lots of choices!) at this vegetarian restaurant that opened more than two years ago and enjoys a growing number of faithful patrons.
In Part 1, Chiqui tells us how her keen interest in wellness—spurred by her own poor health and diet as a child–inspired her to move toward a vegetarian diet and then, more than two years ago, to open her own place.

I will be traveling over to Guatemala this summer for three weeks and I am staying with a host family. I am a little worried when it comes to food. I am a vegetarian I will eat no type of meat, fish, chicken or seafood. How many options are there for vegetarians down there?
Not to worry. Most host families have cooked for vegetarians. I was told an average of 25% of the students at my language school were vegetarians. Plus they just don’t eat as much meat there. My family only ate meat with half of their own meals. You may have to help them with the concept of complementary proteins.
That said, the restaurants are pretty bleak, especially if you’re vegan. They will have one or two of three options. Overcooked spaghetti with tomato sauce, a salad, or a veggie plate which will contain a large spoonful of each of 5 or 6 different veggies and half a boiled potato. I tended to avoid the salads unless I was sure the restaurant was sanitizing the produce properly, i.e. upscale restaurant in a tourist area. If you eat cheese you may find a few more options. There are many restaurants that serve comida tipica or traditional food. Here you can always order black beans and rice which is a staple food of Guatemala but never listed on the menu. On the plus side, I lost 15 lbs. in the five weeks I was there. If you’re going to Quetzaltenango, there’s a decent restaurant called Taste of India that has several dishes to choose from.
Don’t eat food from the street vendors.

During a road trip to ski in Tahoe I was put in charge of finding a restaurant on the way (big surprise). By the time we were ready to eat it was past 10pm, but thanks to the Yelp app I found the perfect place in Davis: Burgers and Brew. The place was hopping on the Friday night but we only had to wait a few minutes to be seated. The atmosphere was welcoming and cozy, inside and out, even on a cold winter’s night. The staff was super friendly and the menu had a few delicious vegetarian options. I ordered a side of garlic fries and the portobello mushroom burger on lettuce with guacamole – great decision! Both were very flavorful and hit the spot, not to mention inexpensive. I’d go back for sure!

In part 3 of Medlock Chinese Language Builder Food and Drink we are asking about what is in the food. This lesson is very useful for vegetararians. Eating vegetarian food in China can be diffiuclt so you need to ask the restaurant not to put meat in the food. Jewish and Muslim people will also find this lesson useful Chinese food often contains pork or seafood. In this lesson you will learn to ask if food contains pork or seafood and ask them to exclude it – especially you can ask the restaurant not to cook using pork fat (the prefered method of frying in China).
You will learn how to order some of the classic Sichuan dishes.

This is a complete instruction on how to make 3 different indian dishes.
1) Mung Bean Dal (really any dal) – These are Indian style lentils. Basically its like an indain mushy bean paste that goes great over rice or with an indian bread
2) Vegetable Pakoras – These are indian spices vegetables breaded and deep fried. They are incredible. You will not believe how good the Broccoli pakoras are until you taste one. Also included are onion and sweet potato pakoras.
3) Aloo Palak – This is an indian spinach and potato dish. Add a whole lot of earth balance (vegan butter substitute) or a rich oil like safflower oil at the end to give it a really rich and oily taste. This is kinda a Ghee (Clarified Butter) substiute that I use with indian cooking.
I was going to make parathas or nann with this since I eat almost every single indian meal with them. However this was getting to be a huge feast as it is and the pakoras can almost be like a bread substitue if you dip them in the other foods.
If you do not know about indian cooking or indian breads in general… go to a resturant now or try this at home. You are missing out in life.
