Hi Everyone! Here you have another Vegetarian Meal, super easy, and delicious! It is filled with tons of flavor, proteins and lots of vitamins too! Really warm and hearty, you wont miss the meat all!
Serves 4-6
Ingredients:
1 14.5oz can kidney beans
1 14.5oz can red beans
1 14.5oz can black beans
1 14.5oz can vegetable broth
1 14.5oz can of corn kernels
1 14.5 can diced tomatoes with jalapeno peppers
1 1/2 cups chopped bell peppers (frozen or fresh,any color)
1/2 cup chopped onions
2 minced garlic cloves
1 minced jalapeno pepper
1 tablespoon extra virgin olive oil
1 teaspoon ground cumin
2 tablespoons dry oregano
3-4 tablespoons of chili powder
1/4 teaspoon cayenne pepper (optional)
1 1/2 cups of water (optional)
2 bay leaves
salt to taste

In this edition of The Schumin Web Video Journal, I am making a pot of vegetarian chili for the week’s lunches. I demonstrate what goes into making the chili and how I’m doing it, and discuss things such as lunch with Isis and her guy, serious voices saying silly things (complete with imitations of Strong Bad from Homestar Runner and Lord Zedd from Power Rangers), an imitation of Julia Child, heights of cars, car bluetooth, putting pepper remains down the garbage disposal, and anything else that I can think of.

This Chili has the potential to be famous! It is the best chili I have ever had! It’s even good cold! I used 3/4 cup of vegatable broth, 3 carrots, 2 green peppers 1 sweet onion, 1 red onion, 1 orange pepper, 1 hot pepper (Jalapeno), 3 celery stalks, 6 cloves garlic, 7-10 drops of cayenne pepper sauce, Large can(28 oz) of diced tomatoes, Large can(28 oz) of whole peeled tomatoes, 1 large can(25 oz) of each black, red kidney, pinto, and chili beans, & added 1 cup frozen corn after I cooked it for 30 min. First cook the veggies in the broth for 5-7 min then add all your spices (1 or 2 tbsp chili powder, 1 tbsp cumin, 1 tsp of red cayenne pepper, salt, black pepper, and oregano, 1/2 tsp coriander powder, 1/4 tsp clove powder. Then add your tomatoes and your beans to the mix and cook on med high heat for 25-30 min until color looks like chili.. I like to let it set overnight before I eat it but it is so good right away as well.. This makes about 2.5 gallons of chili.

I’m specifically looking for a recipe for vegetarian chili that has a relatively small yield (no more than 4 servings).
Thanks!
If you know how to make regular chili, do everything the same. Or you can look up a recipe. The things you would need to substitute would be: instead of beef broth, use vegetable broth. Instead of meat, use a bag of boca "meat" which is just veggie protein crumbles.
