Sunday, November 18th, 2012

Our home grown tomatoes are in excess amounts and our eggplants are going well too but they need to be used so I’m wanting a simple vegan recipe to use them. Any suggestions?

Tomato and eggplant salad – chop them up, serve on a bed of lettuce with the dressing of your choice. Or you could use could make eggplant parmesan using vegan parmesan and make the sauce from the tomatoes.

What is the easiest vegan cake recipe you can suggest for me?

Saturday, November 17th, 2012

I feel like eating cake, but I don’t have any vegan recipes. I want a fluffy cake, any flavor really, if I could choose I would say vanilla flavor, plain cake flavor because then I can improvise.
I want an easy recipe, and I don’t have egg replacer, unless I can use a banana instead.
Thanks!

This is a light and fluffy vegan yellow cake recipe – it’s not heavy, like some vegan cake recipes. A basic vegan yellow cake is good for children’s birthdays or other special occasions. See also: More Vegan Cake Recipes
Ingredients:

* 1/2 cup vegan margarine, softened
* 1 cup sugar
* Egg replacer for 4 eggs (use banana)
* 1 3/8 cup flour
* 1/2 tsp baking powder
* soy milk as needed

Preparation:
Preheat the oven to 325 degrees. Grease the bottom only of a 8-inch square pan.

Cream the vegan margarine with an electric mixer until smooth. Add the sugar gradually. Add the egg replacer and mix well. Add the flour and baking powder and stir. If the mixture is too dry, add a few drops (up to 1/4 cup) of soy milk.

Spread the mixture in the prepared pan and bake for 30-40 minutes. Allow the cake to cook and frost with your favorite vegan frosting, if desired.

I’m in the mood to bake [food, not ...]. I am vegan, so any vegan recipe suggestions?

Friday, November 16th, 2012

I love to bake, especially at night when I can’t sleep. I am vegan and always looking for new recipes to try. If you don’t have any vegan recipes, go ahead and share your other favorites, and I will be able to vegan-ize it. Only thing is, I am all out of vanilla and almond extract, so no recipes with those ingrediants, please!

Unbelievable Vegan Chocolate Cake

This cake is a beautiful thing; moist and dense; every bit as sinful tasting as any non-vegan chocolate cake could be. It is also extremely easy to make.

2 cups sugar (I’ve used unrefined brown sugar, and beet sugar, successfully)
1 3/4 c. flour
3/4 c. cocoa powder
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
Equivalent of 2 eggs substitute
1 c. soy or nut milk
1/2 c. vegetable oil
2 tsp. vanilla extract
1 c. boiling water

Heat oven to 350 degrees. Grease and flour two 9-inch round
baking pans or one 9 x 13 square baking pan.
Combine all dry ingredients in large bowl. Add egg sub., soy or nut milk, oil and vanilla. Beat for 2 minutes on medium speed. Stir in boiling water (batter will be thin).
Pour into pans and bake for 30-35 minutes (round pans) and 35 to 40 minutes for the square pan.

Chocolate Frosting

1 stick (1/2 c.) vegan margarine (I really don’t think oil will work in this)
2/3 c. cocoa
3 c. powdered sugar
1/3 c. soy or nut milk
1 tsp. vanilla extract

Melt margarine’. Stir in cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk, if needed. Add vanilla. Makes enough to frost a round 9" layered cake or one 9" x 13" square cake.

Peanut Butter Frosting

1 cup natural peanut butter
1/2 cup vegan margarine
2-3 cups icing sugar
dash of sea salt
2-3 tbsp soy milk

Place all ingredients in a bowl and beat until smooth. Chill for a half an hour before icing the cake (and make sure you cake is completely cooled). Should make enough for two round 8" or 9" layers or one 9"x13" sheet cake
