This is a colourful, appetizing and simple recipe: the pasta with vegetable ragout. A vegetarian dish, very easy and quick to prepare. Let’s see how to do! We’ll need:
• 12,3 oz (350 g) of short pasta
• 2 zucchini
• 8,8 oz (250 g) of field mushrooms (champignon)
• 2 spring onions
• 3,5 oz (100 g) of cherry tomatoes • 30 basil leaves
• 2 tbsp of chopped parsley
• 5 tbsp of extra virgin olive oil / salt / pepper
• grated parmesan cheese to taste
First of all, wash the tomatoes and the zucchini, and cut into cubes. Clean the mushrooms and cut into small pieces. Clean and finely chop the spring onions and, in a non-stick pan, brown with oil on a low flame.
Then add the mushrooms and the zucchini, let them stew and, lastly, add the tomatoes.
At this point, add salt and boil the pasta in boiling water.
When the vegetable ragout is cooked, add pepper and the roughly chopped basil leaves. Mix everything and tùrn off the heat.
When the pasta is almost ready, add a ladle of cooking water to the sauce to make it less dry.
Drain the pasta that has been boiled in plenty of salted water, add to the pan and toss with the vegetables.
Serve sprinkled with grated parmesan cheese to taste. Here is our pasta with vegetable ragout… good, easy and quick!

Tonight my vegetarian friend Hanna is coming over for dinner, so I decided to make a variant of the classic hamburger, the chickpea burger. It takes less than 30 minutes to make; I’m using canned chickpeas, but you can also use dried chickpeas, as long as you soak them for at least 10-12 hours.
So, put the chickpeas in a food processor… then cut the shallot. This recipe is great not only for vegetarians, but also to get your kids to eat legumes, since they’re usually a little bit reluctant. Roughly cut the garlic, too… then add: 2 eggs… 2 teaspoons of mustard… and some grated ginger. Now take the sandwich bread… a couple of slices, and break it with your hands, as it will be processed. For this recipe you can use chickpeas, as well as any other legume. Add salt and pepper… and process for a few seconds… it’s enough. Now take a bowl… and half of the mixture, 3 spoonfuls; keep aside this coarse, grainy mixture, since we’ll need it to make the patties firmer. Process the remaining mixture until even consistency… perfect. As you can see, now it’s ready… so we can blend the 2 mixtures together. In this case, I’m using canned chickpeas, so I’ll add a couple of tablespoons of breadcrumbs, because canned chickpeas are a bit watery and the addition of breadcrumbs will absorb the moisture. Stir well, to blend the breadcrumbs into the mixture… taste to see if it’s salty enough… yes it is! Now… if you want the traditional stripes on the patty, use a grill pan like this, otherwise you can use any other pan; put it on the heat… until very hot, meanwhile we’ll shape the patties. Here we are. This recipe makes about 8 patties, or 6, it depends on how thick you want it to be. Take a spoonful of dough and make them as evenly shaped as possible… that’s it. Now put it on the pan and go on. Look at the stripes!
Well, we can assemble our burger, first of all cut the buns in half. Be careful, don’t be taken in by the fact that it’s a vegetarian recipe, because it’s not light at all, since legumes and chickpeas in particular are very high in calories. Spread the mayonnaise, of course you can use any sauce or dressing you like, I prefer it to be simple, so I’ll add the mayonnaise, the salad, the patty and the tomato… and voilà. Just in time… buon appetito!
For 8 burgers:
• 2 ½ cups (500 g) of chickpeas
• 1 shallot
• 1 clove of garlic
• 1 tsp of fresh grated ginger
• 2 medium eggs
• 2 tsp of mustard
• 2 bread slices
• salt to taste For serving:
• 8 medium burger buns
• salad to taste
• tomatoes
• mayonnaise

Here’s the ingredients we’ll need for today’s recipe, a tasty appetizer, ready in 30 minutes: the eggs in bacon baskets! Crack the eggs… now add the heavy cream, as an alternative you can replace it with ricotta cheese or a couple of tablespoons of mascarpone cheese… 2 tablespoons of parmesan cheese… beat everything… until you have an even mixture. If you want to make the eggs richer, you can add more cheese or vegetables, but take care to finely dice them, so they’ll bake evenly. Now add salt… pepper, and the roughly torn basil leaves… be generous with basil!
Give another stir… and take the pan: we’ll use a muffin pan, because our baked eggs will look a bit like muffins. Take a slice of bacon… lay the second one crosswise… and line the rest of the muffin cup. If you don’t have a muffin pan, you can use aluminum baking cups, that you can find at the supermarket, or ceramic ramekins, like this. You don’t need to grease the pan, since bacon is fat enough and it won’t stick to the pan.
They’re ready, now pour the egg mixture into each basket. Bake at 350°F (180°C) for 12-15 minutes, until the eggs are cooked and golden brown.
Our eggs in bacon baskets are ready, serve with a fresh salad. For a vegetarian version, you can use grilled zucchini instead of bacon, but take care to line the mould with parchment paper… good, easy and quick!
We used:
For 12 servings:
• 5 eggs
• less than 1 cup (200 ml) of heavy cream
• 24 slices of bacon • 2-3 tbsp of parmesan cheese
• a few basil leaves
• salt and pepper to taste
