Everyone is different. Some can do a direct change and some need time to slowly reduce meat.

If you think you can do a direct switch, just do it. If it fails, you can always revert to the gradually method. The most important thing is the right and positive mindset, if you think positively, you will be able to do it without much problem at all. You need to have a goal, that's and work towards it.

Also there are many different type of veg*n food that you can explore like Asian Vegetarian Cuisine or veganise meat dishes.

Any food without meat (e.g Yasai Tempura, cucumber sushi, mango sushi, egg fried rice, deep-fried spring roll, hash brown, corn salad, vegetarian curry, deep-fried tofu with peanut sauce, Vietnamese fresh spring roll etc) or the omit meat can be a vegetarian dish yet still yummy.

There are also mock meat products available in the world.

No matter what, you need to eat a well balance and healthy veg*n diet. You can get all the info easily on the web.

All the best : )
References :
No, you can stop right now completely if you would like to. I did that. I've been a vegetarian for only about 3 weeks. Unless you think it would be hard for you to give up meat, than go right ahead. Otherwise, you could slowly give meat up. Start by giving up red meat, and then poultry and then lastly fish or in any other order that would be easiest for you.

There is the possibility that you'll go through a detoxing process, as I did; it also depends on how unhealthy you were before. I went through some headaches and a bit of nausea, but it's not that bad and it doesn't happen to everyone :D
References :
more on detoxing

I stopped cold turkey, It was surprisingly easy. If you are a healthy eater you will do fine. But if you just eat a lot of pasta and pizza then you shouldn't go veggie. Make sure you eat beans, nuts, and whole grain breads for protein. (wheat bread isn't as healthy as most people think) Also make sure you eat enough dark leafy greens. With out these greens you may become anemic. If you are thinking about becoming vegan I would strongly recommend a good multi-vitamin. Make the switch! You will feel better physically and spiritually. Good Luck!
References :
Veggie for the past 4 years

Plan your meals.

1) Breakfast: cereal, toast, bagel, fruit etcs.. - this covers your daily carbs, better to have carbs in the morning versus at night.

2) Mid morning: yogurt, apple, protein bar. this will give you energy

3) Lunch: veggie sandwich, grilled veggies, veggie soup with lots of beans - you'll get your proteins and with the veggies, get your "a,b,c,d,e" vitamins.

4) Dinner: big spinach salad, or a leafy green salad, with a main course veggie dish. the salad covers your iron and more protein, with great vitamins. - b12

The main course veggie dish, - you can basically have what you want as along as it not to heavey in crabs. like don't eat loads and loads of paste or bread. but a little is good!

For ideas for recipes go on-line and there are loads of healthy free veggie recipes!
References :
You won't get sick if you stop eating meat. There is nothing in there that you can't get from other foods. This is definitely the case if you become a lacto-ovo vegetarian, someone who still eats eggs and dairy. From those you will get vitamin B12. You do not need to worry about protein at ALL. Everyone who eats balanced meals gets plenty of this in their diet from other foods, like breakfast cereals, wheat, beans. If you want to make sure you get enough iron, dark leafy greens are a great source. You can also try a vegetarian multi-vitamin.

The only reason I would suggest going more gradually into it, as opposed to cold turkey, is that if this is really something you want to do, cold turkey may cause you to get frustrated and give up. Of course, that depends on how vegetable-based your diet already is. Some people who want to go vegetarian already eat a pretty much vegetarian diet. For them cutting all meat out at once won't be that big of a change. It will be easy for them to adapt to in terms of learning new recipes, planning meals, etc. If your diet includes a lot of meat--meat at every meal, or even just every day--it'll be harder for you, and cutting back may be a better first step.
